This Double Chocolate Chia Pudding may sound indulgent, but it’s actually chock full of healthy fat and protein making it a complete and nutritious breakfast or snack. Chia pudding is an excellent option for busy mornings because it practically prepares itself in the fridge overnight. If chocolate isn’t your thing, feel free to use the same base of chia, almond milk, and sweetener but get creative with the ingredients and toppings!
Ingredients:
- 10oz unsweetened almond milk (New Barn is a great store-bought option)
- 5 tablespoons chia
- 2 teaspoons sweetener of choice or 6-8 drops liquid stevia
- 2 tablespoons cacao powder
- 1 tablespoon coconut oil
- 1 tablespoon boiling water
- Chocolate Fix Grain Free Granola, for topping
Directions:
- In a mason jar, combine almond milk and chia.
- Mix with a spoon or shake mason jar with the top on until almond milk and chia are well combined.
- In a separate bowl or glass, combine cacao powder, coconut water, and boiling water until mixture is melted and fully combined. This allows the cacao powder to be fully absorbed into the cold chia seed mixture.
- Add cacao mixture to chia and almond milk and finish with sweetener.
- Mix once again, either with a spoon or by shaking the jar with the top on.
- Allow to sit in the fridge for several hours or overnight until the texture resembles pudding.
